Málaga's cuisine is light, nutritious and typically
Mediterranean with ample feature of seafood. The most
famous local dish which is known and renowned across the
country as Málaga's best is the deep fried fish in
batter called Pescaíto Frito which, although
seemingly simple, the dish requires very fresh fish and
the right kind of oil to achieve the proper point where
crispness and succulence meet. Adobo is a
delicious local recipe made by marinating fish in wine
before frying it. Chancletes (whitebait)
and Sardinas (sardines) are particularly good
here while the salmonetes (red mullet) and
acedías (miniature sole) are also worth
mentioning. A regional
specialty are Chanquetes, very small fishes of
the family of anchovies. Boquerones in Vinagre
are other small fishes which are put into marinade for a
day or so before being turned into a delicious and very
refreshing dish. In the mountain-ranges close to
Málaga, on the other hand, there's plenty of of game,
sausages and the famous "Rabo de Toro a la
Rondeña", bull's tail prepared in the style of the
small town Ronda. Málaga's own version of the national
dish Gazpachos (cold soup) is another feature
dish of the local cuisine. Vegetarians will definitely
be delighted by the freshness and abundance of the
vegetables in the region, and should by all means try
Ajo Blanco, a healthy cream of almond, garlic and
olive oil.
Almonds and honey are heavily used in sweets-making in
Málaga as a testimony to the Moorish influence. Among
Málaga's best known desserts are those very popular
Christmas-cakes, Alfajores and Polvorones,
and a regional specialty with a promising name: "Bienmesabe"
means simply that tastes good. For a drink to go with
these sweet delicacies, look for Scholtz which is
Málaga's own brand of sweet dessert wine whose fame
traveled as far as England in the 19th century.
